Veggie Pasta

This veggie pasta dish is a comfort food staple in our home. During winter I usually cook this at least every other week. It only takes about 20 minutes to make and even though it doesn't have any meat it is full of rich greens so it will leave you feeling satisfied and nourished. I try to stick to an 80% vegetarian / 20% meat diet which is why you'll notice most of my recipes are very veggie friendly but I promise to share more healthy meat-friendly recipes soon. 

What you need: (serves 4)

3 large organic tomatoes largely diced

1/2 large onion diced

4-5 cloves of garlic minced (I LOVE garlic so the more the merrier in my book and it's SO good for you) 

2 cups organic kale chopped (I used Lacinto Kale here) 

2 medium sized organic zucchini's diced

2 cups organic spinach

Olive Oil

Salt & Pepper  

1 package brown rice pasta (here I used Trader Joe's Brown Rice Fusilli)

How to Make:

Start by heating a few tablespoons of Olive Oil over medium heat and add your diced onion. While the onion is cooking start boiling your water for the pasta.

Cook the onion for a few minutes until it becomes translucent and then add the large diced tomatoes. Cook the tomatoes with the onion for approximately 10-15 minutes until the tomatoes start to break down and release a lot of their juices making almost a sauce like consistency. Next place your garlic and kale into the pan and mix those well. If you start to notice the mixture becoming too thick and dry at this point just add about 1/4 cup of water here. I usually always add a bit of water for consistency. Once the kale cooks down a bit, another 3 minutes or so add kosher salt and pepper to taste. Lastly add in the spinach for the last 2 minutes of cooking. 

Once your pasta is cooked al dente (it's important here to cook the BR pasta al dente because otherwise it gets too gummy and mealy). Drain your pasta and then add it back into the pot you boiled it in with about 2 tablespoons of olive oil so that the pasta doesn't stick. Lastly pour your veggie sauce over the pasta and combine until everything is mixed in well and evenly. The pasta should have a light coating of the fresh tomato sauce. Finish and serve with an extra sprinkle of kosher salt & freshly ground pepper.
