Banana "Ice Cream"

Hello sweet tooth lovers! This stuff is life changing for your taste buds.  This banana "ice cream" is incredibly easy to make and has very few ingredients. If you have a sweet tooth look no further - it is so good that I promise you will not miss the real thing. I made this for the first time last week and it was a huge hit in our household. The best part about this is that it's dairy free. Life is all about enjoying and not depriving yourself it's just about finding a balance and the right ways to indulge.

What you need:

All you need is a small food processor or a 1 serving ninja/vitamix cup. I find the food processor works better because it blends more evenly than a smoothie cup because it's horizontal and not vertical. The vertical cups tend to blend more unevenly but if that's all you have you can make it work just make sure to keep scraping the edges down.

Ingredients: (serving size 2)

  • 2 large frozen bananas (take a bunch of ripe bananas slice them up and throw them in a freezer friendly container that way you always have some on hand for this recipe and for smoothies)
  • 2 TBSP unsweetened Almond Milk
  • 1 TBSP Raw Cacao Powder
  • 1 TBSP Almond Butter (you can add another 1/2 or full tablespoon here if you prefer)
  • 1 TSP Vanilla Extract

5 ingredients you ask? Yep, that's it! Work quickly because the "ice cream" tends to melt. Start by blending the frozen bananas with the almond milk until the mixture starts to get creamy and begins to resemble frozen yogurt. (approx 1 minute) You will have to scrape down the sides of the container a few times to make sure there are no chunks and keep blending. Once you have reached your desired consistency add the cacao powder, vanilla extract and almond butter and blend all of the ingredients together. It should take about another minute or so for everything to blend evenly. Once done - transfer into 2 small mugs and top w/ chopped walnuts and dark chocolate chunks. Lastly - dig in and enjoy!
