For the past few months i've been having a love affair with overnight oats! Why you might ask? For so many reasons, but i'll list a few...great on the go, easy quick prep time, filling, healthy and oh so delicious! I've seen endless pinterest posts of gorgeous looking oats and though mine might not look picture perfect I can assure you that they taste amazing. As far as recipes go you can really add/eliminate anything you want from it but the key here is the oat to liquid ratio and the type of oats you use. I've made the mistake of trying this with steel cut oats (nope sorry folks - it doesn't work). Gluten free oats work well they just need to be rolled oats. Okay onto the good stuff...how to make them.
What you need:
1 pint sized mason jar
1/2 cup old fashioned rolled oats
1/2 cup almond or coconut milk (sometimes I blend the 2 which is also delicious)
1 tablespoon pure maple syrup (none of that Aunt Jemima's crap)
1 large spoonful of almond butter (trader joe's has an amazing raw creamy almond butter that blends very well and its only ingredient is raw almonds - bonus)
3-5 frozen organic strawberries
1/4 cup frozen organic blueberries
a pinch of cinnamon
1 large spoonful of greek yogurt or coconut yogurt for those who have trouble with dairy digestion like myself :) - the yogurt is not essential can be omitted if you prefer.
1/2 tablespoon of chia seeds - also optional but adds great texture.
How to make the oats: Just throw it all in the mason jar, pop the lid on top and shake vigorously. Then leave it in the fridge overnight (or at least 4 hours) and you will have delicious oats ready and waiting for you when you wake up. This is the best breakfast when you are in a hurry in the morning b/c you can just grab them and go. I love you overnight oats! <3
