Another summertime staple: the smoothie. Or if you live in South Florida like I do - a year round staple. It's delicious, refreshing and easy to make. All you need is a single serve blender attachment like the Ninja, Vitamix (Hamilton Beach also makes a great one). I have increasingly become a fan of the very lightly sweetened smoothie - additional sweeteners make it overpoweringly sweet for my taste so the banana alone adds just the perfect amount for me. As you begin to eliminate refined sugars in your life - your tastebuds really begin to change and adapt. However, this smoothie recipe is just sweet enough though that it should satisfy any palate.
2 cups organic baby spinach (I find the spinach blends more easily than most types kale, however you could easily do 1 handful of each if you prefer - the kale just adds a bit more of a grainy texture)
1 cup almond milk (or milk of your choosing)
1/2 cup of frozen berries of your choosing - in this I like to add about 5 small strawberries
pinch of Cinnamon
1 tablespoon of coconut oil
1 heaping spoonful of almond butter
3 ice cubes
Blend until smooth, top w/ unsweetened coconut flakes and enjoy!
